A super healthy breakfast or evening snack made with mixed vegetables. Choice of vegetables could vary as per your taste and availability. These cutlets are a very good option for kids who run away from vegetables.

Serving size: 6-8
Ingredients:
4-5 boiled and mashed potatoes
1 bowl grated Beetroot
1 bowl peas and French beans ( I crushed them in a grinder as my daughter hate peas)
Fresh coriander leaves
Two bread slices roughly crushed
Salt to taste
½ tsp red chili powder
½ tsp chaat masala powder
¼ cup semolina
Oil

Instructions
The simplest recipe of cutlets
Take a large bowl
Add in the mashed potatoes, beetroot, coarsely ground peas and French beans, coriander leaves
Mix all these together and then add in the bread (crushed for binding), salt chili powder, chaat masala powder.
Mix all these together and give them the shape of cutlets.
Roll the cutlets over semolina for a crisp coating.
Refrigerate them for 15 min.
Shallow fry these cutlets until cooked.
Serve hot.
