Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 large onion, chopped
- 2 bell peppers (any color), chopped
- 2 carrots, peeled and chopped
- 1 cup cherry tomatoes
- 1/4 cup chicken broth
- 1 tablespoon balsamic vinegar
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- Season the chicken breasts with salt and pepper.
- In a large skillet over medium heat, add olive oil and sauté the garlic for about 30 seconds.
- Add the thyme, oregano, paprika and cayenne pepper (if using) and stir to combine.
