Hassel back potatoes is a delicious appetizer packed with herbs and butter for party. It is tender from inside and crisp from outside.

Ingredients
4 medium-sized Potatoes
2 tsp Dried herbs
4 tsp Butter
2 tsp Olive oil
4 cloves of Garlic
Pepper as per taste
Salt as per taste
Instructions
- Preheat the oven to 200degrees.
- Place a potato on a cutting board between two chopsticks. Slice the potato into thin slices, the chopsticks will prevent you from cutting all the way through.
- In a pan mix together the olive oil, butter, salt and pepper, garlic. Cook on low flame for 2-3 min.
- Switch off the flame and then add the dried herbs of your choice.
- Brush the olive oil and the butter mixture all over the potatoes, making sure to get some in between the slices.
- Bake for 35-40 minutes until potatoes are tender and browned.
- Note: Time May vary according to the size of the Potatoes.
- Remove the potatoes from the oven; let them cool for 5 minutes. Again apply the olive oil and butter mixture.
- Insert the cheese slices and onion slices in between each cut of the potatoes. Be very gentle while doing that because you may break the Potatoes as they are very soft and tender at this time.
- Return the potatoes to the oven and bake for an additional 25-30minutes or until they are crisp.
- Serve hot
